The American Culinary Federation (ACF), Personal Certified Executive Chef (PCEC) certification is for an advanced chef who is engaged in the preparation and management of foods on a "cook-for-hire" basis. PCECs have knowledge of menu planning, marketing, financial management and operational decision making. Candidates must meet education and experience requirements. Candidates must pass a written and practical exam.

Education REQUIREMENTS
Candidate must provide documentation of completion for three mandatory education courses:
- 30-hour course in Nutrition
- 30-hour course in Food Safety and Sanitation
- 30-hour course in Business Management
In addition, candidate must meet one of the following education requirements: Option 1:
Candidate must have 250 Continuing Education Hours (CEHs).
Option 2:Candidate must have a High School Diploma or GED and 150 CEHs.
Option 3:Candidate must have an Associate's Degree in Culinary Arts.
Option 4:Candidate must be a graduate of an ACFEF Apprenticeship Program.
Experience REQUIREMENTS
Candidate must have a minimum of three years fulltime Personal Chef experience engaged in all aspects of food preparation and management. Experience must be within the past 10 years.
