The American Culinary Federation (ACF), Certified Culinary Administrator (CCA) is an advanced credential for executive-level chefs responsible for the administrative functions of running professional food service operations. Candidates for the CCA demonstrate proficiency in culinary knowledge, human resources, operational management, and business planning. CCA candidates must meet educational, experiential, and training requirements. Candidates for the CCA are required to have a prerequisite ACF certification; eligible prerequisites are the Certified Chef de Cuisine (CCC), the Certified Executive Chef (CEC), or the Certified Executive Pastry Chef (CEPC). CCA candidates are required to submit a written narrative and pass exams.

Credential Pre-requisite REQUIREMENTS
Candidate must hold one of the following American Culinary Federation (ACF) certifications:
- Certified Chef de Cuisine (CCC);
- Certified Executive Chef (CEC); or
- Certified Executive Pastry Chef (CEPC).
Education REQUIREMENTS
Candidate must meet one of the following education requirements:
- High School Diploma/GED plus 150 Continuing Education Hours (CEH)
- 250 Continuing Education Hours (CEH)
- Associate's Degree in Culinary Arts
- ACFEF Apprenticeship Program
Candidate must have completed five 30 hour courses in each of the following: Nutrition, Food Safety & Sanitation, Supervisory Management, Advanced Sanitation (HACCP) and Human Resource Management. Courses completed more than five years ago (except Advanced Sanitation and HR Management), also require an 8 hour refresher in each topic.
Experience REQUIREMENTS
Candidate is required to have three years of experience as an Executive Chef in charge of all culinary units in a food service operation. Candidate must have supervised at least three full-time people. Experience must be within the past 10 years.
Other REQUIREMENTS
The Certified Culinary Administrator (CCA) credential has the following other requirements:
- Candidate must submit a written narrative with a minimum of 400 typed words which details the candidate's job duties and responsibilities with an emphasis on the candidate's administrative and fiscal responsibilities.
